ROSE
Rosa
Flavors: sweet and floral, with
fruit, mint, or spice, depending on
variety
Treasured for their elegant appearance and fragrance, roses are concentrated into
perfumes, lotions, and cosmetics around the world. In Middle Eastern and Indian cui-
sines, rose is also an important seasoning, adding delicate floral flavor to everything
from pastries to marinades to rice. The
petals and hips (their fruit) are often dis-
tilled to make rose water, which itself is
sold as a spice in many specialty markets,
along with rose oil and rose preserves.
All roses are edible, but for the best
flavor, opt for varieties with the stron-
gest fragrance. Those most frequently
used in the kitchen are the damask rose
(Rosa damascena), rugosa rose (Rosa
rugosa), and cabbage rose (Rosa centi-
folia). Note that flower shop roses con-
tain dangerous pesticides and are intended for ornamental use only.
In the Garden
There are more than 100 species of rose. Some grow into bushy shrubs, while others
climb around fences and trellises. Shrub roses will grow successfully in containers;
choose a deep pot to make room for the lengthy roots. Healthy roses largely depend
on climate. Choose flowers that will grow easily in your region while also providing
optimal fragrance and flavor in the kitchen. Always wear protective gloves when han-
dling prickly roses, and invest in safety goggles for protection while pruning.
Size: Shrubs, up to 8 feet tall and 3 feet wide; climbing roses, up to 20 feet tall and
6 feet wide
Container: Half barrel, about 15 gallons; smaller or larger depending on variety
Light: Full sun
Soil: Moist, rich, loose, well drained. Mix compost or mulch into the soil around the roses
