ANISE HYSSOP


Agastache foeniculum


Other common name: Agastache

Flavors: sweet, anise, subtle
sweet mint

This fragrant herb is neither anise nor hyssop, though its lovely anise flavor and aroma
might make you think otherwise. Its nickname, licorice mint, is more apt. A member
of the mint family, anise hyssop bears leaves that look like mint and gorgeous spears
of lavender or blue flowers. It’s a favor-
ite of hummingbirds and bees, and can
grow quite tall, from 2 to 5 feet, making
it a dramatic plant in the garden.
Leaves and flowers are both edible:
Leaves add sweet anise flavor to teas,
honeys, fruit salads, and marinades,
while the flowers offer beautiful color
as garnish for any dish. Also look for it
under the names “lavender hyssop” or
“blue giant hyssop.”

In the Garden
These stunning perennial plants thrive for 2 to 3 years, after which they can be divided
and replanted in spring.
Size: Up to 5 feet tall
Container: At least 1 gallon
Light: Full sun or partial shade
Soil: Dry to moist, well drained. Mix compost or mulch into the soil to add nutrients
and improve drainage.

Anise hyssop makes a delicious and
healthful after-dinner tea, which
can help stimulate digestion, calm
stomach upset, and prevent or relieve
gas. Thanks to its antibacterial
properties, it’s also effective in
treating symptoms of cold and flu,
including cough, sore throat, and
congestion.
