Nonhydrogenated margarine poses a risk to your health, since it’s made with
refined vegetable oils, contains excessive amounts of omega-6 fatty acids, and
may contain trans fats—even with no hydrogenation. There should be no
margarine in your diet, period.

Which Fats Are Best to Cook With?
Saturated fats, such as butter, ghee, and coconut, are best to cook with since they
are extremely stable at high temperatures and do not oxidize, create free radicals,
or interfere with hormone production. Monounsaturated oils, such as extra-virgin
olive oil, can also be used, but at much lower temperatures. Refined
polyunsaturated oils should never be used for cooking, since they create free
radicals when heated.
