CRISPY FRIED BACON
SERVES 2 TO 4
8 slices bacon, cut crosswise in half
Place the bacon in an even layer in a 12-inch cast-iron or
heavy-bottomed nonstick skillet and cook over medium
heat until sizzling, about 4 minutes. Reduce the heat to
medium-low and continue to cook until the fat is
rendered and the bacon is crisp on both sides, flipping
and rearranging the slices as necessary, about 12 minutes
total.
- Drain the bacon on a paper-towel-lined plate and serve.
