1 teaspoonfulspicerysalt
2 tablespoonfulsChineseham
(a) Open theducks with onecut about 4
incheslonginthebackofeach.
(&) When the ducks have been cleaned,
place them ina suitable bowl with the back
upward.
(c) Rubtheduckinsideandoutwithspic-
erysalt.
(d) Placecarefullyineachduckoneofthe
cupsofwine. Besurethewinedoesnotspill
ontheduck.


(e) Steaminadouble-boilerfor2%hours,

oruntiltender.


(/) Removecover. Pourincold waterto
stopthesteam. Bymeansofaclothtakeout
thecupsofwine.


(g) Pour offthegravyintoanotherbowl.
Skimofftheoil.
