Mango Pudding
Mangos are among the most popular fruits in the world, and there are more than three hundred varieties. The fruit’s avid fans have cultivated it
all over the world, and people still breed new strains today.
SERVES 2 TO 4
4 dates, seeded
½ cup filtered water
4 mangos, peeled, seeded, and quartered
4 bananas, peeled and halved crosswise
Freshly shredded coconut, for garnish
Place the dates in a small bowl, cover with the water, and soak for about 1 hour, or until soft. Drain, reserving the liquid. Place the mangos,
bananas, dates, and ¼ cup of the reserved liquid in a blender and purée. If needed, add additional reserved liquid until the mixture is smooth yet
thick. Transfer to a serving bowl and refrigerate for 2 hours, or until well chilled. Garnish with the shredded coconut and serve.
