Apple-Almond Soup
This is a classic combo that tastes like apple pie in a bowl. If time allows, try sprouting the almonds, which makes for a less oily soup.
SERVES 2 TO 4
2 apples, cored
½ cup soaked or sprouted almonds, drained
1½ cups filtered water
½ teaspoon ground ginger
½ teaspoon ground cinnamon
Place the apples and almonds in a blender. While slowly adding the water, blend until smooth. Pour into bowls and sprinkle each serving with
ginger and cinnamon.
