Spicy Papaya-Lime Soup
Most of the papayas you’ll find in the market today are hermaphrodites (half male, half female). These fruits are oblong and have a slight pear
shape, unlike true female papayas, which are round and have five lobes. I prefer the flavor of true female papayas, but either kind will work fine
in this dish.
SERVES 2 TO 4
2 papayas, peeled, seeded, and chopped
Juice of 1 lime
Filtered water, as needed
Pinch of cayenne pepper
Place the papayas and lime juice in a blender and blend until smooth, adding a little water, if needed, to thin. Pour into bowls, sprinkle each serving
with cayenne, and serve.
