Cascadilla Soup

Cascadilla means “cascade” or “waterfall” in Spanish, which is an accurate description of the outpouring of flavor from this sweet and tangy

soup.

SERVES 2 TO 4

5 tomatoes

1 avocado, peeled and pitted

1 red bell pepper, seeded and chopped

1 cucumber, chopped

1 green onion, chopped

1 clove garlic, crushed

2 seeded, soaked dates, drained

1 teaspoon chopped fresh dill

Bragg Liquid Aminos

Using a homogenizing juicer, homogenize the tomatoes (you should have about 4 cups of juice). Place the tomato juice and avocado in a blender
and blend. Add the bell pepper, cucumber, onion, garlic, dates, and dill and blend well. Add the Braggs to taste. Pour into bowls and serve.
