Zucchini-Squash Salad


Cucurbits such as summer squashes sometimes have a bitter taste to them. To improve their flavor considerably, soak the chopped zucchini


and yellow squash in water with a pinch of salt and a dash of lemon juice, then rinse thoroughly.


SERVES 2 TO 4

2 zucchini, cubed
2 yellow squash, cubed
1 onion, sliced and rinsed
1½ cups Almond-Cumin Dressing

In a salad bowl, combine the zucchini, yellow squash, and onion. Drizzle the dressing on top and serve.
