Sweet Mustard Dressing
This dressing is spiced by the seed of the mustard plant and tempered by the sweetness of the carrot juice and dates. Using orange juice to
replace the dates results in a tangier flavor.
MAKES 1½ CUPS
4 carrots
3 seeded, soaked dates, drained, or ½ cup freshly squeezed orange juice
1 teaspoon ground mustard
2 tablespoons Bragg Liquid Aminos, or a pinch of sun-dried sea salt
1 tablespoon nutritional yeast
Process the carrots through a juicer into a bowl (you should have about 1⅓ cups). Combine the carrot juice and the remaining ingredients in a
blender and blend until smooth. The dressing can be covered and refrigerated for up to 2 days.
