Mexican Wild Rice and Tofu
In many places, rice is a staple, or primary food source. Wild rice is very adaptable and can be seasoned with a variety of ingredients. This
entrée has a decidedly Mexican flair.
SERVES 4
3 cups sprouted wild rice
2 small tomatoes, diced
2 tablespoons diced onion
2 tablespoons minced fresh cilantro
1 red bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
1 clove garlic, pressed
¼ cup Bragg Liquid Aminos, or 1 teaspoon sun-dried sea salt
½ teaspoon chile powder
½ teaspoon cayenne pepper
Juice of ½ lime
2 cups Basic Tofu or Basic Seed Cheeze
In a large bowl, combine the rice, tomatoes, onion, cilantro, bell peppers, and garlic. Add the Braggs, chile powder, cayenne pepper, and lime
juice, and toss well. Serve with the tofu or seed cheeze.
