Almond-Corn Croquettes
We served this evolution of croquettes at The Raw Experience during a Living Thanksgiving celebration on Maui.
SERVES 4
1 cup sunflower seeds
1 cup flax seeds
2 cups sprouted almonds
4 cups corn kernels (approximately 8 ears corn)
2 tablespoons Bragg Liquid Aminos
¼ cup diced onion
Almond-Cumin Dressing, for drizzling
2 loaves Caraway-Onion Essence Bread, for serving
In a coffee grinder or food processor, grind the sunflower and flax seeds into a fine powder. In a homogenizing juicer or a food processor,
homogenize or finely grind the seed powders, sprouted almonds, corn, Braggs, and onion and place in a large bowl. Form the mixture into small,
1½-inch loaves. Arrange on a serving plate, drizzle with the salad dressing, and serve, accompanied by the bread.
