Tofu Loaf


The sprouted tofu gives this dish a nice light texture while still having a very meaty taste. For a richer version, use seed cheeze (any variation)


in place of the tofu.


SERVES 4

2 cups Basic Tofu
1 cup carrot pulp (from juicing carrots)
½ onion, chopped
½ stalk celery, chopped
2 cloves garlic, minced
¼ cup minced fresh flat-leaf parsley
¼ cup raw tahini
2 tablespoons Bragg Liquid Aminos
1 tablespoon nutritional yeast

In a large bowl, combine all of the ingredients and mix thoroughly. Line a loaf pan with a piece of plastic wrap and press the tofu mixture firmly into
the pan. Invert the loaf pan onto a plate. Gently remove the loaf pan and set aside, then carefully peel away the plastic wrap. Alternatively, you can
use your hands to form the tofu mixture into a loaf shape. Serve.
