Sunflower-Carrot Croquettes
I first created this delightful little dish for a housewarming party that I was having. I served the croquettes shaped into stars and hearts, and
people loved them.
SERVES 4
6 carrots, chopped
3 cups soaked sunflower seeds, drained
1 cup chopped fresh cilantro
¼ cup diced onion
3 tablespoons Bragg Liquid Aminos
2 tablespoons nutritional yeast
Fresh herbs (such as flat-leaf parsley or dill), for garnish
In a homogenizing juicer, homogenize the carrots and sunflower seeds into a large bowl. Mix in the cilantro, onion, Braggs, and yeast and form into
shapes such as circles, stars, or hearts. Arrange on a serving platter, garnish with fresh herbs, and serve.
