Buckies


This recipe is one of the greatest ever invented. Buckies are a sprouted buckwheat snack treat, cereal, salad topping, and more. Their


nutritional value is very high and the taste is delectable. This is possibly the crunchiest treat in the world of raw foods.


SERVES 4

2 cups dates, seeded
2 cups filtered water
1 teaspoon pure vanilla extract
4 cups sprouted buckwheat, well drained

Place the dates in a bowl, cover with the water, and soak for about 1 hour, or until soft. Drain, reserving ½ cup of the liquid. Place the dates,
reserved liquid, and vanilla in a blender and blend. Pour the date mixture into a large bowl, add the buckwheat sprouts, and mix well. Using one of
the methods described here, spread the mixture ½ inch thick on the appropriate drying surface and dehydrate the buckies for 7 to 10 hours.
Crumble apart and use as a topping or just eat as a snack.
