Banana Mylk


In Hawaii, banana trees grow everywhere; from seed, it takes only nine months to get a hundred-pound stalk of bananas. Bananas are excellent


for making mylk as they provide a creamy texture and a sweet yet subtle flavor. There are hundreds of varieties of banana, but Williams and


Bluefield work the best. As a flavoring variation, try any of the following: blend in 2 tablespoons raw carob powder; blend in the seeds of half a


vanilla bean; blend in the seeds of half a vanilla bean and 2 tablespoons raw cacao. You can also first freeze the bananas and enjoy a banana


mylk shake with or without any of the above variations.


SERVES 2 TO 4

4 dates, seeded
1 cup filtered water, plus additional as needed
4 bananas, peeled

Place the dates in a small bowl, cover with the 1 cup water, and soak for about 1 hour, or until soft. Transfer the dates and their soaking water to a
food processor and blend until smooth. Add the bananas and blend until creamy. If needed, add a little more water and pulse a few times until
combined. Serve in a tall glass.
