Cashew Mylk
This sweet and rich nut mylk is one of the most delicious and filling treats. Cashews blend up better than any other nut, so if you are looking for
a really creamy consistency, use cashews. As a variation, blend in the seeds of half a vanilla bean or 3 tablespoons of raw carob along with the
dates and nuts.
SERVES 1 OR 2
2 dates, seeded
½ cup cashews
3 cups filtered water
Place the dates and cashews in a small bowl, cover with the water, and soak for about 1 hour, or until soft. Drain, reserving the liquid. Place the
dates, nuts, and soaking liquid in a blender and blend until creamy. Pour into a tall glass and serve.
