OLEG: THE CLASSIC GRAIN EATE R


I was seated next to Oleg at a dinner party put on by the
fi nancial services company he worked for. As Oleg gazed at the
buffet table, which held immense quantities of rich, overcooked
food he had already eaten too much of, he was reminded of the
simple foods he had eaten as a youngster growing up in the
Ukraine. They never gave him the stomachache that plagued him
now.
He began reminiscing about his childhood. Oleg’s father,
Peter, like his neighbors, raised his own chickens. His family’s
house was on a street where there were some empty lots.
During the day all the chickens in the neighborhood marched
en masse to the fi elds that had grown up inside these lots.
There they ate grass and hunted for pieces of calcium-rich
limestone. As the sun was beginning to set, the chickens, like
homing pigeons, found their way back to the houses of their
masters. No identifi cation tags were necessary. For their
evening meal, wheat and barley seeds were thrown on the
ground, along with loads of sand, which the chickens rooted
through for limestone. Oleg remembers that these chickens—
every part of which he and his family ate—had a wonderful
taste and the eggs the hens laid were a rich orange color like
no other egg he has eaten since.
Oleg was aware of the fact that if he was still eating the food
he had eaten as a child in the Ukraine he wouldn’t have the
digestive ailments he was now plagued with, and this was a
powerful factor in his decision to go on a metabolically appropriate
diet. Another was a family history of diabetes. Every member of
his mother’s family had become diabetic in their midforties. Oleg
was thirty-fi ve. He pictured himself in fi ve or ten years. If he didn’t
change his eating habits, he knew he would be much fatter by then
and would probably also be diabetic. What good would all his
money do him then? Oleg took the niacin test and discovered he
had a grain-eating metabolism. He went on the grain eater’s diet
and in two months lost thirty pounds. By the end of a year he had
lost an additional twenty pounds and no longer suffered from acid
indigestion.
