Mediterranean Turkey
Salad with Mushrooms

crimini mushrooms are an excellent
source of these important nutrients.


Ingredients:


12 cups salad greens
1 medium tomato, diced
1 cup sliced cucumbers
8 kalamata olives
2 oz turkey breast
1 cup crimini mushrooms, sliced


Dressing:
2 TBS extra virgin olive oil
1 TBS lemon juice
1 clove garlic, chopped (optional)
Salt and pepper to taste


Directions:


Combine all ingredients and toss with dressing ingredients. Dressing ingre-
dients don't have to be combined separately before tossing.
