Mexican Cheese Salad


In this easy addition to your Healthy

Ingredients:


8 cups salad greens
2 cups cooked black or pinto beans (or 1 15-oz can, rinsed and drained)
½ medium avocado, cubed
1 medium tomato, diced
2 oz-wt low-fat cheddar cheese, grated
¼ cup salsa
Juice from lime wedges, to taste
Salt and pepper to taste


Directions:



  1. Divide greens onto two plates. Sprinkle beans, avocado, and tomato
    over greens.

  2. Top with cheddar cheese, your favorite salsa, and the juice of lime
    wedges.
