flour is traditionally whole wheat, but in
recent years, food distributors have
begun adding the more processed, less
healthy white flour called maitha. When
you purchase this flour, make sure its
label reads “100 percent whole wheat.”

different from the whole-wheat flour
found in regular grocery stores. If you try

flour, they’ll be heavier, darker, and a
