gram flour (besan) is made from
skinned, split, and ground black
chickpeas. It is a vegan’s dream,
because added to many savory items
(like my Tofu Chickpea Fritters [see
recipe on page 103]), it acts as a binding
agent and makes eggs completely
unnecessary. It’s also delicious blended
with water and made into a quick savory
pancake for breakfast. More mainstream
markets are carrying “chickpea flour,”
but it’s not clear whether this flour is
made from white or black chickpeas.
I’ve used this flour, and it works. But to
avoid confusion, when I refer to gram
flour I mean the traditional gram flour
