DOUBLE BOILER: This is essentially a
cooking vessel with two compartments
that allows you to boil water on the
bottom to cook items in the top
container. Typically, it’s used to melt
chocolate. I use my double boiler to
steam dhokla.


  • KETTLE: If you need to add water to
    dishes as they cook, it’s best to add
    boiling water so you don’t lose precious
    cooking time. I rely on my electric kettle
