  • SPICE GRINDER: Grinding your own
    spices is much easier than you think if
    you have the right tools. The best and
    most basic way to grind spices and spice
    blends quickly is to purchase a simple
    coffee grinder and use it only for spices.
    If you don’t mind using a little muscle,
    you can use a mortar and pestle. If you
    have a powerful blender, such as a
    Vitamix, use its smaller dry jug to grind
    your spice blends. I’ve been using this
    option more frequently to grind larger
    batches of blends. The key is to break up
    your cassia leaves, whole dried red
    chile peppers, and cinnamon sticks
    before grinding so they grind down
