1–4 tablespoons (15–60 mL) water
½ teaspoon paprika, for garnish
- In a food processor, combine the
 beans or lentils, lemon juice, garlic, salt,
 black pepper, cumin, coriander, and
 cilantro. Process until well mixed.
- With the machine still running, add the
 oil. Continue to process until the mixture
 is creamy and smooth, adding water as
 needed, 1 tablespoon at a time.
- Serve garnished with the paprika and
 with toasted naan, pita, or papad on the
 side.
