Indian-Inspired Soup

Soup is one of my easiest go-to meals
on busy school nights. For my girls, it’s
a treat in a bowl; for me, it’s fast and
easy but nutritious as well. Cook your
main ingredient (whole beans or
lentils) ahead of time, and a fantastic
soup will be at your fingertips any day
of the week.
1 teaspoon oil
1 medium yellow onion, peeled and
diced (1 cup [150 g])
3 medium carrots, peeled, trimmed, and
diced or cut into thin rounds (1 heaping
