  1. Add the vegetables (use fresh if
    frozen are not available), cashews, and
    raisins. Cook for 2 minutes, stirring
    frequently.

  2. Add the rice and salt. Cook for
    another 2 minutes, stirring frequently.

  3. Add the water and bring to a boil.

  4. Reduce the heat to low, partially
    cover the pan, and simmer for 25
    minutes. Turn off the heat, adjust the lid
    to completely cover the pan, and let the
    rice sit for 5 more minutes. Fluff and
    serve immediately with a side of soy
    yogurt raita.


Note: To make this dish with white
basmati rice, use 4 cups (978 mL) water
