Sweet Potatoes (see recipe on page
182 ). The key is to be careful when
frying the seeds in oil. Take them off the
heat when they get reddish brown; any
darker and they become so bitter that
they are virtually inedible. Fenugreek
seeds are also medicinal, with research
showing that they have the ability to
regulate blood sugar levels and help
control diabetes. Grind this spice and
add it to your dishes, or do as many in
India do: sprout the seeds (see page
111 ) and add them to a soup or salad.
Fenugreek leaves (kasoori methi) are
also used extensively in Indian cooking.
These are the dried leaves of the
fenugreek plant, which has yellow and
white flowers and resembles alfalfa.
