Paleo Piña Colada
This kid-friendly version of the tropical classic goes
perfectly with fajitas and guacamole. SERVES 2
1 cup water
1 tablespoon unrefined coconut oil at room
temperature
1 cup fresh coconut milk
12 ounces frozen pineapple cubes
Pineapple wedgesCombine water, coconut oil, and coconut milk in a blender.
Puree until smooth. Add pineapple cubes and puree until
thoroughly combined.
Pour into chilled glasses and garnish with pineapple
wedges.
