T Banana Bran Muffins


Commercially prepared muffins are high in fat and sugar, both of which can cause
problems after GBP surgery, but these healthy banana muffins use unsweetened
applesauce to replace the oil and bananas and Splenda adds sweetness. The batter
keeps in the refrigerator for up to a week, so you can mix up the batter and then take
out just enough to bake a few muffins each time you want some.
Stage: Regular foods

Preparation time: 10 minutes
Cooking time: 20 minutes

Yield: 24 servings (1 muffin each)

6 cups Grape-Nuts Flakes
5 cups whole-wheat flour
5 teaspoons baking soda
3 cups Splenda
4 large eggs

1 quart low-fat buttermilk
1 teaspoon vanilla extract
1 cup unsweetened applesauce
6 large bananas, mashed

1 Preheat the oven to 400 degrees. Add all ingredients to a large bowl and mix well.
2 Fill muffin cups^2 ⁄ 3 full and bake for 20 minutes.

Tip: To bake two muffins at a time, fill two center muffin cups with batter and the empty
cups with water and bake for about 15 minutes.
