Mojo Chicken
Mojo, also known as Spanish barbecue sauce, is made of citrus juices, garlic, fresh
oregano, and olive oil. No tomatoes are needed for this citrus marinade to turn your
everyday chicken dish into a fiesta. We use a combination of white and dark meat in
this recipe. Dark meat is slightly higher in calories because it contains more fat;
however, the fat helps keeps the chicken more moist, so some people who have
undergone weight loss surgery can tolerate dark meat better than white meat. Though
roasting is typically done with a rack, in this recipe the chicken roasts right in the pan.
Turkey Cutlets with
Thyme-Tomato Sauce
Turkey cutlets are thin slices of turkey breast. This recipe isn’t what you may imagine
when you think turkey, but we bet it’s tasty enough to get Thanksgiving turkey out of
your mind. The cutlets cook quickly, so keep an eye on the clock.
Stage: Regular foods
Preparation time: 5 minutes
Cooking time: 12 minutes
Yield: 8 servings (4 ounces each)
8 teaspoons olive oil, divided
2 pounds turkey cutlets
1 teaspoon salt, divided
1 teaspoon black pepper, divided
1 tablespoon chopped fresh thyme
1 teaspoon minced garlic
3 cups chopped tomato
2 tablespoons white wine vinegar
1 Heat 4 teaspoons of the oil in a large skillet over medium-high heat.
2 Sprinkle turkey on both sides with^1 ⁄ 2 teaspoon salt and^1 ⁄ 2 teaspoon pepper. Add turkey
to the pan and cook for 2 to 5 minutes on each side, or until done. Remove from the pan
and keep warm.
3 Add the remaining 4 teaspoons of oil, thyme, and garlic to pan. Saute for 1 minute.
4 Add the tomatoes and cook for 1 minute, stirring frequently. Stir in the remaining
(^1) ⁄ 2 teaspoon salt, (^1) ⁄ 2 teaspoon pepper, and vinegar. Serve over turkey.
Tip: If tomatoes aren’t in season, you can use a drained 28-ounce can of diced tomatoes.
However, this will increase the sodium content of the dish.
