Chicken Cacciatore Crockpot


Who knew this delicious, traditional Italian chicken dish could be cooked in a crockpot?
There’s nothing like coming home from a long day of work and having your house smell
like a five-star Italian restaurant. This recipe even freezes well. Use the low setting on
your crockpot if you have all day to cook your meal, and use the high setting if you
want it in done in half the time.

Stage: Regular foods
Preparation time: 10 minutes

Cooking time: 20 minutes plus 7 to 9 hours
Yield: 12 servings (1 cup each)

(^1) ⁄ 2 cup all-purpose flour
1 teaspoon salt
(^1) ⁄ 2 teaspoon black pepper
3 pounds boneless, skinless chicken thighs,
cut into 1-inch cubes
2 tablespoons olive oil
1 large red onion, sliced thin
One 8-ounce can low-sodium tomato sauce
1 tablespoon Italian dried herbs
One 14.5-ounce can low-sodium diced
tomatoes
8 ounces sliced mushrooms
1 cup sliced black olives
4 cloves garlic, minced
(^1) ⁄ 4 cup chopped celery
(^1) ⁄ 2 cup red wine
1 teaspoon red pepper flakes
1 Combine the flour, salt, and pepper in a large resealable bag. Divide the chicken into 3
equal portions. Add the first portion to the bag and toss to coat, then remove the
chicken and repeat with each of the other 2 portions.
2 Heat the olive oil in a heavy skillet over medium-high heat. Brown the chicken on all
sides, working in batches.
3 Place the sliced onions on the bottom of your crockpot. Add the browned chicken
thighs. Combine the rest of the ingredients in a medium bowl and stir together. Pour
mixture over the top of the chicken.
4 Cook on low heat for 7 to 9 hours (or on high heat for 3 to 4 hours). Serve over whole-
wheat pasta or with a side of steamed veggies.
