Spicy Picante Turkey Casserole


This spicy casserole is easy to make and easy on your wallet. You can make it in
advance and heat it up when ready to eat, so it works well for potlucks. Picante (which
means “spicy”) sauce is a type of salsa, and you can use fresh or bottled sauce.

Stage: Regular foods
Preparation time: 15 minutes

Cooking time: 30 minutes
Yield: 6 servings (1 cup each)

2 teaspoons olive oil
9 ounces ground turkey breast

(^1) ⁄ 2 cup sliced green onions
2 cups sliced mushrooms
8 ounces canned diced green chilies, drained
11 ⁄ 2 cups mild picante sauce
2 cups cooked brown rice
6 tablespoons light sour cream
(^1) ⁄ 2 cup shredded sharp cheddar cheese
1 Preheat the oven to 350 degrees. Coat an 8-x-8-inch baking pan with nonstick spray.
2 Heat the oil in a large skillet over medium heat. Brown the ground turkey until it has no
pink, and drain excess fat from pan. Add the onions and mushrooms and cook until soft.
3 Stir in the chilies and cook for 2 minutes. Add the picante sauce. Stirring constantly,
cook until thickened, about 5 minutes.
4 Combine the rice and sour cream and spread at the bottom of the baking pan. Add
the turkey mixture evenly on top. Sprinkle with the shredded cheese. Bake for 15 to
20 minutes, or until hot and cheese is melted.
Tip: If you want the rice to have more flavor, cook it in low-sodium broth instead of water.
To help with tolerance, be sure to “overcook” the rice by letting it cook longer in more
liquid than usual.
