Salmon Patties
After trying this recipe, you may join the ranks of people who have made salmon patties
a Friday-night dinner staple for years. But then, these are tasty and easy enough to enjoy
any night of the week. With yummy honey mustard for dipping, these patties make a full
meal when served with a tossed salad. The patties can be made a day in advance to save
time on extra-hectic days, but wait to cook them until just before serving.
Stage: Regular foods
Preparation time: 10 minutes
Cooking time: 6 minutes
Yield: 4 servings (One 3-ounce patty each)
2 eggs, beaten
(^1) ⁄ 4 cup nonfat milk
(^1) ⁄ 4 cup chopped green onion
(^1) ⁄ 4 cup finely chopped celery
(^1) ⁄ 4 teaspoon Old Bay seasoning
Two 6-ounce cans salmon, without bones and
skin, drained and flaked
(^1) ⁄ 4 cup bread crumbs
2 teaspoons canola oil
Honey Mustard Sauce (see the following recipe)
1 Combine eggs, milk, green onion, celery, and Old Bay seasoning in a medium bowl. Add
the salmon and bread crumbs and mix well. Form into 4 equal, thin patties.
2 Heat oil in a large sauté pan over medium heat. Cook patties for about 3 minutes, and
turn and cook another 3 minutes or until browned. Serve with Honey Mustard Sauce.
Honey Mustard Sauce
(^1) ⁄ 4 cup light mayonnaise
1 teaspoon Dijon mustard
1 teaspoon honey
Combine all ingredients is a small bowl. Serve with patties.
