T Pineapple Upside Down


Taking the Southern-U.S. dessert pineapple upside-down cake and turning it into a
smoothie is just downright awesome! Because pineapple is fibrous and can cause food-
sticking problems, puréeing it in the blender makes it easier to eat and enjoy.
Stage: Smooth foods

Preparation time: 5 minutes
Yield: 1 serving (1 cup)

(^1) ⁄ 4 cup plain calcium-enriched soy milk
2 tablespoons nonfat dry powdered milk
(^1) ⁄ 4 cup crushed pineapple in its own juice,
drained
(^1) ⁄ 4 teaspoon coconut extract
(^1) ⁄ 8 teaspoon lemon extract
(^1) ⁄ 8 teaspoon butter extract
(^1) ⁄ 4 cup plain nonfat yogurt
(^1) ⁄ 4 cup ice
1 packet sugar substitute, or to taste
Stir the powdered milk into the soy milk and let stand for 1 to 2 minutes. Then place all
ingredients in a blender and blend well.

Spice-It-Up Delights


You can experiment with your smoothies by adding different flavorings. Look
in your spice pantry to see what you have available. If you would add it to a
dessert, you can add it to a smoothie. For example, cinnamon makes a great
addition to many drinks. Try the smoothies with spice blends in this section
until you’re brave enough to invent your own.

T Pumpkin Spice


Pumpkin pie in a glass — yum! The tofu and yogurt make this smoothie extra creamy,
and the pumpkin with spices makes it a masterpiece. Be sure you don’t use pumpkin
pie filling, because it has added sugar.
