T Oatmeal Bars
Oatmeal is great, but adding a little honey and spices makes this chewy bar the best
you ever had. We make this cookie bar with lots of whole-grain fiber. It’s a great dessert
or snack, and it’s easy to carry with you if you’re out and about. If stored in an airtight
container, they keep for up to a week.

Preparation time: 10 minutes
Cooking time: 20 minutes
Yield: 16 servings (1 bar each)
1 cup quick-cooking oats
1 cup bran cereal
(^1) ⁄ 4 cup whole-wheat flour
(^1) ⁄ 2 cup walnut pieces
(^1) ⁄ 2 cup nonfat powdered milk
(^1) ⁄ 2 teaspoon ground cinnamon
(^1) ⁄ 4 teaspoon ground ginger
(^1) ⁄ 4 cup honey
2 large eggs
1 Preheat the oven to 350 degrees. Coat a 9-x-13-inch baking pan with nonstick spray.
2 Place oats, cereal, flour, walnuts, powdered milk, cinnamon, and ginger in a food pro-
cessor and coarsely chop and mix. Add the honey and eggs and pulse until the mixture
is well combined.
3 Place the mixture in the pan and spread evenly. Bake until lightly browned around the
edges, about 20 minutes.
4 Let cool for 20 minutes; then cut into 16 bars.
