A VOCADO SPREAD
1 ripe avocado
1 garlic clove
1 teaspoon fresh lemon juice
(^1) ⁄ 4 cup chopped fresh cilantro
Dash of cayenne
1 cup grated carrots
1 cup sunflower sprouts
2 low-carb La Tortilla Factory tortillas
- Preheat the oven to 400°F.
- Cut the tofu into cubes, toss with olive oil and tamari, and bake for
20 minutes.
- Blend the avocado spread in a food processor.
- Spread each tortilla with a layer of avocado spread.
- Place the tofu in a line horizontally about two-thirds toward the bot-
tom of each tortilla.
- Place a line of carrots and sprouts above the tofu.
- Roll the tortillas and serve.
