STAINED-GLASSCHRISTMAS COOKIESPREP + COOK TIME 5 0 MINUTES (+ REFRIGERATION) MAKES 3 2``````1 vanilla bean250g butter, softened¾ cup(165g) caster sugar1egg1 tablespoon water2¼ cups (335g) plain flour90g individually wrappedsugar−free fruit drops,assorted colours``````1 Split vanilla beanlengthways. Scrape seedsinto a medium bowl withbutter, sugar, egg and thewater. Beat with an electricmixer until combined.Stir in sifted flour, in twobatches. Knead doughon a floured surface untilsmooth. Cover with plasticwrap and refrigerate for30 minutes.2 Preheat oven to180°C/160°C fan.``````Linetwooventrayswith baking paper.3 Using a rolling pin,gently tap the wrappedlollies to crush themslightly. Unwrap lollies,then separate by colourinto small bowls.4 Roll dough betweensheets of baking paperuntil 5mm thick. Cutshapes from dough usingan 8cm−long Christmastree cutter.Placecookieson oven trays. Using a4cm−long Christmas treeor 1.5cm star cutter, cutout the centre of each treeto make windows. Use askewer to make a smallhole in the top of each treefor threading throughribbon, if you like.5 Bake trees for 7 minutes.Remove trays from oven.Fill each window with a fewof the same−colouredlollies.
