Icing sugar for dusting
Pinch nutmeg
1 tbsp hulled hemp seeds
Olive oil for frying
Soak apricot in 1/8 pint hot water (hot enough to put your hand
into) for 1 hour. Add apricot & water to approx. 110 g batter. Add 2
tsp. cinnamon. Whisk and leave stand for further 30 minutes. In a
deep frying pan (or tempura pan) heat approx 2cm in height of oil.
Place mix into an icing bag and squirt directly into oil. Be creative
with balls, doughnuts, spirals or any shape would work well! Cook
for 1 minute or when golden brown on both sides. Take the fritters
from the hot batter with a slotted spoon. Place on a draining rack,
dust with icing sugar, hulled hemp and spices. Serve when cool
enough to eat.
