Useful equipment


Foods are damaged when cooked in metallic vessels. Aluminium
is the worst culprit. If you use tinned brass or copper pots it must
be with pure tin and not mixed with lead or zinc. Stainless steel
equipment is fine for storage, but not for cooking. Use earthen or
quality enamelled vessels.


Mortar & Pestle or coffee grinder: Possibly the most useful kitchen
implement I have is my electric blender, similar to a coffee grinder.
