What To Do:

a. After killing the animal, bleed it promptly by cutting its throat at point A. If the head is to be salvaged, then
insert knife at point B, cutting deeply until blood flows freely.

b. Figure 5-22.2: Remove genitals or udder. Prop the carcass belly up using rocks or brush for support. Cut
circular area shown in illustration. Remove musk glands at points A and B to prevent tainting the meat.

c. Figure 5-22.3: Split hide from tail to throat by carefully inserting the knife under the skin, but do not
perforate the paunch or intestines. Cut around the anus and free the bung so it may be removed with the
intestines. Cut around the diaphragm to free it from rib cage.
