BREAKFAST PIZZA RUSTICA


Experiment with your own variations by using different vegetables, cheeses, and salsa.

1 MINI WHOLE WHEAT PIZZA CRUST
1 HANDFUL OF MUSHROOMS, THINLY SLICED
1 HANDFUL OF BABY-SPINACH, ROUGHLYTORN
2 TABLESPOONS CRUMBLED GOAT CHEESE
2 TABLESPOONS OLIVE OIL
1 EGG SALT AND PEPPER TO TASTE

1. Preheat an oven to 350°F.


2. Top the pizza crust with the mushrooms, spinach, and goat cheese.


3. Drizzle the oil on top and crack an egg into the center of the pizza round.


4. Bake the pizza according to the package directions, or until the egg is cooked. To serve, quarter the


pizza, allowing the yolk to break. Season with salt and pepper.
