THAI NOODLES
(Number of Powerfoods: 2)
½ POUND WHOLE WHEAT FETTUCCINE
1 TABLESPOON TOASTED SESAME OIL
2 CUPS SNOW PEAS
½ MEDIUM RED PEPPER, SLICED INTO MATCHSTICKS
2 GRILLED CHICKEN BREASTS, CHOPPED
FOR THE DRESSING:
3 TABLESPOONS SOY SAUCE
½ TABLESPOON PEANUT OIL
2 TABLESPOONS TOASTED SESAME OIL
2 TEASPOONS RICE VINEGAR
1 TABLESPOON SUGAR
2 SCALLIONS, THINLY SLICED
1 TABLESPOON GRATED FRESH GINGER
1 CLOVE GARLIC, MINCED
3 TEASPOONS MONGOLIAN FIRE OIL
1. Mix the dressing ingredients in a bowl.
2. Cook the fettuccine following the directions on the package. Drain well. Place in a large bowl, add
the sesame oil, toss to coat, and refrigerate until cold, at least 15 minutes.
3. Cook the snow peas in boiling water for 1 minute, drain, and cool. Add the peas and pepper to the
pasta.
4. Stir the dressing to combine, pour over the pasta, and toss to coat. Top with the chicken. Serve
cold.
