1½ CANS (15 OUNCES EACH) BLACK BEANS, RINSED AND DRAINED
½ CUP CHICKEN BROTH
1 CHOPPED PLUM TOMATO
1 SCALLION, SLICED
1 TABLESPOON LIME JUICE
1 TEASPOON HOT SAUCE
1 TEASPOON EXTRA-VIRGIN OLIVE OIL
1 TABLESPOON CHOPPED CILANTRO
½ TEASPOON GROUND CUMIN
SALT AND PEPPER
1 TABLESPOON SHREDDED REDUCED-FAT MEXICAN-BLEND CHEESE
Dump everything except the cheese into the blender. Process until smooth, scraping the sides as
needed. Pour into bowls and microwave for 2 or 3 minutes, stirring occasionally. Sprinkle with
cheese.
