MAKE-MY-DAY FILET WITH GRILLED ONIONS
(Number of Powerfoods: 3)
2 CUPS SLICED VIDALIA ONIONS
SALT AND PEPPER
1 TEASPOON GARLIC POWDER
½ TEASPOON GROUND CUMIN
½ TEASPOON DRIED OREGANO
¼ TEASPOON CAYENNE
4 PIECES FILET MIGNON
(4 OUNCES EACH)
1 TEASPOON EXTRA-VIRGIN OLIVE OIL
1 CLOVE GARLIC, THINLY SLICED
1 PACKAGE FRESH SPINACH
1. Coat a grill pan with cooking spray and place over medium heat. Add the onions and season with
salt and pepper. Cook, stirring occasionally, until the onions brown. Remove from the heat.
2. Mix the garlic powder, cumin, oregano, cayenne, 1/8 TEASPOONSalt, and 1/8 teaspoon pepper in
a small bowl. Sprinkle this mixture over each side of the filets.
3. Grill the meat over high heat for about 5 minutes per side or until the desired doneness.
4. Meanwhile, heat the oil and garlic in a large skillet over medium heat. Add the spinach and stir
until wilted. Quickly heat up the sauteed onions. Serve the onions on top of the steak and the spinach
on the side.
