8 ¼ cups water
1 ½ cups oat groats
1 ½ cups pearled barley or hulled barley
1 ½ cups chopped dried fruit
½ cup sherry
1 tablespoon fresh lemon juice
2 tablespoons toasted sesame or canola oil
3 tablespoons raspberry vinegar
¾ cup minced fresh chives or scallions
2 ½ teaspoons minced fresh mint leaves (about 15 large leaves)
5 fi rm ripe red plums, sliced
2 Granny Smith apples, sliced

Put the oat groats and 4 cups water in a pot, cover, and bring to a
boil. Reduce the heat and simmer the groats for 1 hour or more until
tender, adding more water if needed. Wash the barley until the water
runs clear. Add the barley to the remaining 4 ¼ cups water in another
pot and bring to a boil. Reduce the heat and simmer for 30 minutes
for pearled barley or 45 minutes for hulled barley.
Put the dried fruit in a bowl with the sherry. Cover and mari-
nate from 15 minutes to overnight in the refrigerator, whichever is
convenient.
Combine the cooked grains and marinated dried fruit and stir in
the lemon juice, oil, vinegar, chives, and mint leaves, but not the fresh
fruit. Cover the mixture and chill. Add the fresh fruit just before serv-
ing. The grain mixture will keep in the refrigerator for a week or more,
and the mixture of fresh fruit can simply be added when desired.

Yield: 15 cups ( ½ cup per serving)
Each serving contains approximately: Calories 128 (14% from fat),
Protein 2 g, Fat 2 g, Carbohydrate 17 g, Cholesterol 0 mg, Sodium 5 mg
Allowances: 1 starch + ½ fruit + ½ fat
