INGREDIENTS | SERVES 4


1 cup liquid margarita mix
4 boneless, skinless chicken breasts
Fresh ground black pepper, to taste


1. Pour the margarita mix into a zip-top bag.
2. Add the chicken breasts and marinate for 2 hours in the refrigerator.
3. Drain, and dust chicken with black pepper.
4. Heat a skillet to medium-high heat. Spray the skillet with nonstick cooking oil.
5. Cook the chicken for 3–4 minutes per side, or until done.

Chili's Monterey Chicken


If your family likes barbecue chicken, then this is a recipe that they will enjoy.

INGREDIENTS | SERVES 1
1 boneless, skinless chicken breast
Salt and pepper, to taste
2 teaspoons barbecue sauce
2 slices of well cooked bacon
¼ cup mixture Monterey jack and sharp Cheddar cheeses
2 slices diced tomatoes
1 teaspoon chopped chives


1. Pound the chicken breast until it is flattened. Season with salt and pepper.
2. Heat a skillet to medium-high heat and spray with nonstick cooking oil.
3. Cook the chicken for 4–5 minutes per side, or until done. Transfer the chicken to a
microwave-safe serving plate.
