1 cup boiling water
½ cup softened unsalted butter
1 cup sugar
½ cup honey
2 large eggs
2 cups buttermilk
½ cup walnut pieces
1. Preheat oven to 400°F. Line a muffin tin with baking cups.
2. In a small bowl, stir flour, baking soda, and salt.
3. In another bowl, combine bran cereal and dried fruit with the boiling water.
4. In a large bowl, beat butter until creamy. Gradually beat in sugar, honey, and eggs.
5. Add the buttermilk to the butter mixture and beat in. Then add the flour mixture, then bran
mixture, and the walnuts.
6. Divide the batter into the lined muffin tins.
7. Bake muffins for 20 minutes.
