Preheat a large pot on medium heat and add
the olive oil. Once heated, add the onion and
cook through
Add the oyster blade steak and cook for 5 mins.
Then pour enough water to cover the steak in
the pot
Add salt reduced beef stock and close the lid,
leaving it to cook for 45 mins
Then place all the chopped vegetables into the
pot and allow it to cook for 25 mins
Finally, roughly chop the watercress and add
into the pot to blanch for 1-2 mins to complete

· 1 tbsp olive oil
· 1 small onion (diced)
· Oyster blade steak (trim
the fat off and chop to
bite sized pieces)
· Water (see method)
· 1 cube salt reduced
beef stock
· ¼ pumpkin (peeled and
chopped into small chunks)
· 3 potatoes (chopped into
small chunks)
· 4 carrots (chopped)
· 2 bunches of watercress
(roughly chopped)
